After a careful selection process, cherries following the natural processing method are laid on African beds in the sun and turned several times a day to guarantee uniform drying. In the honey process, on the other hand, the pulp of the cherries is partially removed after picking and the green coffee bean, in parchment, is left to dry. The resulting fermentation is constantly monitored in order to reach the desired outcome and in-cup profile.
