    It is in the highlands of Minas Gerais, Brazil, that Fazenda Primavera has been cultivating the fine Arara variety for generations and with dedication. Here, production takes place respecting the nature of the soil, also thanks to technology: electronic sensors installed specifically for the 1895 blockchain project support farmers in controlling variations in soil moisture and ambient temperature.

    We are in Angelândia, in the Brazilian state of Minas Gerais, at Fazenda Matilde. Mild climate and rich land make the terrain perfect for the Catucai variety. Farmers, thanks to the data provided by sensors in the soil, control humidity and optimize irrigation, guaranteeing beans capable of producing an excellent cup of coffee.

    ● From sight to touch: our farmers select only ripe beans, those with the right Brix degree, that is the right amount of sugar.

    The only way to ensure a homogeneous and quality harvest is hand-picking: the expert hands of the farmers recognize the ripest beans of the Arara and Catucai varieties and thus allow to bring to the following stages only ideal beans, sweet to perfection.

    Drying

    ● The magic begins: once harvested, the beans are dried in two ways depending on the variety, Natural for Arara and Honey for Catucai. The fermentation phase follows, a natural transformation of the coffee controlled in every detail.

    After a careful selection process, cherries following the natural processing method are laid on African beds in the sun and turned several times a day to guarantee uniform drying. In the honey process, on the other hand, the pulp of the cherries is partially removed after picking and the green coffee bean, in parchment, is left to dry. The resulting fermentation is constantly monitored in order to reach the desired outcome and in-cup profile.

    ● The control of the essence begins: a score is assigned to the quality of the coffee, which will be tested again by our coffee designers in Factory 1895 for a perfect specialty coffee.

    Thanks to the meticulous controls and the respect of every phase of transformation of the bean, the coffee of our Brazilian partner farms is of the highest quality. And upon arrival in Italy, the coffee designer 1895 checks its quality again, tasting it.
