On a map of the world, on the 15th parallel south, sits the little region of Caranavi on the Bolivian plateau. Here, only the ripest coffee cherries are selected before being dried on special African drying beds, and then processed using a painstaking technique, essential to obtain a clean, light and delicate single origin coffee.
